Foodie Friday: Fancy Pants BLT’s

Ya’ll summer is nearly upon us here in Florida and my boys have already been in the pool (even though I find it entirely too cold and will stick nary a toe in until June).  So in the spirit of summer and fresh tomatoes and not using your oven in the 127 degree heat, I have a fabulous recipe for you today!


You will need:

  • ciabatta rolls
  • jarred pesto sauce
  • fresh avocado, sliced
  • bacon, cooked crispy
  • fresh mozzarella cheese, sliced
  • spring mix lettuce
  • fresh tomatoes, sliced

Open the ciabatta rolls and spread the bottom half with pesto.  Top with remaining ingredients in any order you choose.  Place top half of bread on sandwich.  Enjoy!

      We used to live on the Carolina coast, and you are not kidding about that dense humidity! I am absolutely positive that it gets so much hotter there than here in Florida! Glad you enjoyed the post and thanks for reading! 🙂
